4 (6-ounce) salmon fillets, skin on

2 cups asparagus, trimmed

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup cherry tomatoes, halved

4 tablespoons olive oil

3 tablespoons fresh lemon juice

Zest of 1 lemon

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Veggies: On a large baking sheet, spread the asparagus, red and yellow bell peppers, and cherry tomatoes. Drizzle with 2 tablespoons of olive oil, and season with salt and pepper. Toss well to coat the veggies evenly.

      Make the Marinade: In a small bowl, combine the remaining olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper. Whisk to blend.

        Add the Salmon: Place the salmon fillets on the baking sheet with the veggies. Brush the marinade generously over each fillet, ensuring they are well coated.

          Bake: Transfer the baking sheet to the preheated oven and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. The veggies should be tender-crisp.
