2 cups vegetable broth (or water)

1 can (15 oz) black beans, drained and rinsed

1 red bell pepper, diced

1 cup corn kernels (fresh, frozen, or canned)

1 onion, finely chopped

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon chili powder (adjust to taste)

Salt and pepper to taste

2 tablespoons olive oil

½ cup fresh cilantro, chopped (for garnish)

Juice of 1 lime

Avocado slices (for serving, optional)

Instructions
 

Cook the Quinoa: In a medium saucepan, add the rinsed quinoa and vegetable broth. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the liquid is absorbed. Remove from heat and set aside.

    Sauté Vegetables: In a large skillet or frying pan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add Peppers and Corn: Add the diced red bell pepper and corn to the skillet. Stir and cook for about 5 minutes, allowing the vegetables to soften.
