One-Pot Cajun Shrimp and Sausage Pasta

8 oz linguine or fettuccine pasta

1 lb shrimp, peeled and deveined

8 oz smoked sausage, sliced (Andouille or your choice)

1 medium onion, diced

4 cloves garlic, minced

1 bell pepper (red, green, or yellow), diced

1 can (14.5 oz) diced tomatoes with green chilies

2 ½ cups chicken broth

1 tablespoon Cajun seasoning (adjust to taste)

1 teaspoon dried thyme

½ teaspoon paprika

2 tablespoons olive oil

Salt and pepper to taste

½ cup heavy cream (optional for a creamy version)

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the sliced sausage and cook until browned, about 4-5 minutes. Remove the sausage and set aside.

    In the same pot, add diced onion and bell pepper. Sauté for about 3-4 minutes until softened. Add minced garlic and cook for an additional 30 seconds until fragrant.

      Pour in the diced tomatoes (with juices), chicken broth, Cajun seasoning, thyme, and paprika. Stir to combine and bring to a simmer.

        Add the linguine to the pot, ensuring it is submerged in the liquid. Cover and cook according to package instructions, usually about 10-12 minutes, stirring occasionally.

          When the pasta is nearly cooked (al dente), add the browned sausage and shrimp. If using, stir in the heavy cream at this stage for a richer sauce. Cook for another 3-5 minutes or until the shrimp turn pink and opaque, stirring gently to combine.

            Taste and adjust seasoning with salt, pepper, or additional Cajun seasoning as desired.

              Remove from heat and let sit for a few minutes to thicken. Serve garnished with chopped parsley and grated Parmesan cheese if desired. Enjoy your one-pot meal!
