2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

4 cups low-sodium chicken broth

12 ounces fettuccine pasta

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup fresh spinach, chopped (optional)

Fresh parsley, chopped (for garnish)

Sauté the Chicken: In a large pot over medium heat, add the olive oil. Once hot, add the chicken pieces, seasoning them with salt, pepper, and Italian seasoning. Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Sauté Garlic: In the same pot, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to let it burn.

      Add Broth and Pasta: Pour in the chicken broth and bring it to a simmer. Add the fettuccine pasta, ensuring it's submerged in the liquid. Cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente.

        Combine Ingredients: Once the pasta is cooked, stir in the heavy cream and grated Parmesan cheese. Mix well until the sauce is creamy and smooth. If using spinach, add it at this stage and stir until wilted.

          Return Chicken to the Pot: Add the cooked chicken back into the pot, mixing everything until evenly combined. Let it simmer for another 2-3 minutes to heat through.
