1 lb (450g) store-bought gnocchi

1 cup cherry tomatoes, halved

2 cups fresh spinach, roughly chopped

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1 cup vegetable broth

1/2 cup grated Parmesan cheese, plus extra for serving

2 tablespoons olive oil

2 cloves garlic, minced

Salt and black pepper to taste

Fresh basil leaves, for garnish (optional)

Sauté Aromatics: In a large pot or deep skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it burn.

    Add Gnocchi: Stir in the gnocchi to the pot, allowing them to get coated in the garlic oil for about 2 minutes.

      Combine Liquids: Pour in the vegetable broth and heavy cream. Stir well to combine.
