One-Pot Fresh Summer Mac and Cheese

8 oz elbow macaroni

2 cups vegetable broth

1 cup whole milk

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 zucchini, diced

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh or frozen)

1 bell pepper, diced (any color)

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon olive oil

1 tablespoon fresh basil, chopped (for garnish)

1 teaspoon lemon zest (optional)

Instructions
 

Sauté the Veggies: In a large pot, heat the olive oil over medium heat. Add the diced zucchini, bell pepper, and minced garlic. Sauté for about 3-4 minutes until the vegetables start to soften.

    Add Macaroni and Liquids: Pour in the vegetable broth and whole milk, and add the elbow macaroni, onion powder, garlic powder, salt, and pepper. Stir well to combine.

      Bring to a Boil: Increase the heat and bring the mixture to a gentle boil. Once boiling, reduce the heat to a simmer and cover the pot. Cook for approximately 8-10 minutes, stirring occasionally until the macaroni is al dente and most of the liquid is absorbed.

        Add Cheese and Corn: Lower the heat to low and stir in the cheddar and mozzarella cheeses until melted and creamy. Add the corn and halved cherry tomatoes, mixing everything together gently.

          Season and Garnish: Taste and adjust seasoning with more salt, pepper, or lemon zest if desired. Remove from heat and let sit for a few minutes to thicken.

            Serve: Serve hot, garnished with fresh basil for a pop of color and flavor. Enjoy your creamy, cheesy dish packed with summer veggies!
