One Pot Salmon Pasta

12 oz (340g) spaghetti or linguine

2 tablespoons olive oil

1 tablespoon unsalted butter

2 salmon fillets (about 6 oz each), skinless and boneless

Salt and pepper, to taste

4 cloves garlic, minced

1 cup cherry tomatoes, halved

3 cups vegetable or chicken broth

1 cup heavy cream

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon dried oregano

1 teaspoon dried basil

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Salmon: In a large pot or deep skillet, heat olive oil and butter over medium heat. Season the salmon fillets with salt and pepper. Once the oil is shimmering, add the salmon skin-side down, cooking for about 4-5 minutes until golden brown. Carefully flip and cook for another 3-4 minutes until cooked through. Remove the salmon and set aside to cool slightly before flaking it into large pieces.

    Sauté Aromatics: In the same pot, add minced garlic and halved cherry tomatoes. Sauté for about 2-3 minutes until fragrant and tomatoes begin to soften.

      Combine Pasta and Broth: Add spaghetti (or linguine) to the pot, followed by the vegetable or chicken broth, heavy cream, lemon zest, lemon juice, oregano, and basil. Stir to combine and bring the mixture to a gentle boil.

        Cook the Pasta: Reduce the heat to a simmer and let it cook uncovered for about 10-12 minutes, stirring occasionally, until the pasta is al dente and the sauce has thickened a bit. If it seems too dry, add a splash more broth or cream.

          Finish the Dish: Fold the flaked salmon into the pasta, mixing gently to combine. Stir in grated Parmesan cheese until melted and mixed through. Taste and adjust seasoning with salt, pepper, or more lemon juice as desired.

            Garnish and Serve: Remove the pot from heat and let it sit for a few minutes. Serve hot, garnished with freshly chopped parsley and extra Parmesan if desired.
