One-Pot Taco Spaghetti

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 pound ground beef or turkey

1 packet taco seasoning

1 can (15 oz) diced tomatoes with green chilies

4 cups chicken or vegetable broth

12 ounces spaghetti

1 can (15 oz) black beans, drained and rinsed

1 cup corn (canned or frozen)

1 cup shredded cheddar cheese (plus more for topping)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Avocado slices (for topping)

Lime wedges (for serving)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until translucent. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Brown the Meat: Add the ground beef or turkey to the pot, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain any excess fat if necessary.

      Season & Add Ingredients: Stir in the taco seasoning, followed by the diced tomatoes (with juices), and the chicken broth. Mix well.

        Cook the Spaghetti: Bring the mixture to a boil, then add the spaghetti. Reduce the heat to a simmer, cover the pot, and cook for about 10-12 minutes, stirring occasionally, until the spaghetti is cooked al dente.

          Incorporate Beans and Corn: Once the pasta is cooked, stir in the black beans and corn. Cook for another 2-3 minutes until heated through. Season with salt and pepper to taste.

            Cheese It Up: Remove the pot from heat and stir in the shredded cheddar cheese until melted and creamy.
