Ingredients

1 ¾ cups all-purpose flour

1 tablespoon poppy seeds

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

¾ cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

Zest of 1 large orange

Juice of 1 large orange (about ½ cup)

Optional: powdered sugar for dusting

Instructions

Preheat the oven: Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

Mix dry ingredients: In a large mixing bowl, whisk together the flour, poppy seeds, baking powder, baking soda, and salt until well combined. Set aside.

Cream butter and sugar: In another bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.

Add eggs and flavorings: Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract, orange zest, and fresh orange juice until everything is well incorporated.

Combine wet and dry ingredients: Gradually add the dry ingredient mixture to the wet ingredients, alternating with the buttermilk. Start and end with the flour mixture, mixing until just combined. Be careful not to overmix; a few lumps are perfectly fine.

Distribute the batter: Evenly divide the muffin batter among the prepared muffin cups, filling each about ¾ full.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

Cool and serve: Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. If desired, dust with powdered sugar before serving.
