1 cup grated zucchini (about 1 medium zucchini, squeezed dry)

1 cup almond flour

1/2 cup cocoa powder (unsweetened)

1/2 cup maple syrup or honey

1/4 cup coconut oil, melted

3 large eggs

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup dark chocolate chips (dairy-free, if strict Paleo)

Optional: chopped nuts or shredded coconut for topping

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and wring it out to remove excess moisture.

      Mix Dry Ingredients: In a large bowl, whisk together the almond flour, cocoa powder, baking soda, and salt.

        Combine Wet Ingredients: In another bowl, blend the melted coconut oil, maple syrup (or honey), eggs, and vanilla extract until smooth.

          Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the grated zucchini and dark chocolate chips (and nuts or coconut if using).

            Bake: Spread the batter evenly in the prepared baking dish. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).
