Paprika with Ground Beef and Rice

1 lb (450g) ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup long-grain rice

2 cups beef broth

2 tablespoons sweet paprika

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 can (14 oz) diced tomatoes, undrained

1 cup bell pepper (any color), diced

1 tablespoon olive oil

Fresh parsley or dill, for garnish

Instructions
 

Sauté the Aromatics: In a large skillet or dutch oven, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until the onion turns translucent, about 3-4 minutes.

    Brown the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Use a spatula to break it up as it cooks. Sauté until browned and no longer pink, about 6-8 minutes. Drain excess fat if necessary.

      Incorporate Spices: Sprinkle the sweet and smoked paprika, oregano, salt, and black pepper over the cooked beef. Stir well to combine, allowing the spices to bloom for about 1-2 minutes.

        Add Rice & Liquid: Stir in the rice, ensuring it is coated with the beef and spices. Pour in the beef broth and add the undrained diced tomatoes and diced bell pepper. Bring the mixture to a boil.

          Simmer: Once boiling, reduce the heat to low, cover the skillet with a lid, and let it simmer for 18-20 minutes, or until the rice is tender and has absorbed most of the liquid. Avoid removing the lid while it's cooking to maintain steam.

            Finish Up: After the rice is cooked, remove the skillet from heat and let it sit, covered, for another 5 minutes. Fluff the rice with a fork.
