Ingredients

4 bone-in pork chops (1-inch thick)

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

2 large eggs

2 tablespoons Dijon mustard

Salt and pepper to taste

1/4 cup all-purpose flour

2 tablespoons olive oil

Lemon wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Coating: In a shallow dish, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, Italian herbs, and a pinch of salt and pepper. Mix well to create the crust mixture.

Set Up a Dredging Station: In another shallow bowl, beat the eggs and mix in the Dijon mustard until well combined. In a third shallow dish, place the flour.

Season the Pork Chops: Pat the pork chops dry with paper towels and season both sides generously with salt and pepper.

Dredge the Pork Chops: Dust each pork chop in flour, shaking off any excess. Then dip into the egg mixture, ensuring it's well-coated. Finally, press into the Parmesan breadcrumb mixture, covering completely. Place the coated pork chops on the prepared baking sheet.

Cook the Pork Chops: Drizzle olive oil over the top of each pork chop to help them brown nicely. Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F (63°C) and the coating is golden brown and crispy.

Let Rest and Serve: Once cooked, remove the pork chops from the oven and let them rest for 5 minutes. Serve hot with lemon wedges for added brightness.
