Ingredients

1 package (9 oz) fresh or frozen cheese tortellini

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 tablespoon Italian seasoning (dried)

2 cloves garlic, minced

Salt and pepper to taste

2 large eggs

1 cup all-purpose flour

Vegetable oil (for frying)

Fresh parsley, chopped (for garnish)

Marinara sauce (for serving)

Instructions

Cook the Tortellini: In a large pot of salted boiling water, cook the tortellini according to the package instructions until al dente. Drain and set aside to cool.

Prepare the Breading Station: In three shallow bowls, set up your breading station. In the first bowl, add the all-purpose flour. In the second bowl, whisk together the eggs. In the third bowl, combine the breadcrumbs, grated Parmesan, Italian seasoning, minced garlic, and a pinch of salt and pepper.

Bread the Tortellini: Take each tortellini and coat it in the flour, shaking off the excess. Then dip it in the beaten eggs, allowing the excess to drip off. Finally, roll it in the breadcrumb mixture, making sure it is well coated. Repeat with all the tortellini.

Heat the Oil: In a large, deep skillet or frying pan, pour enough vegetable oil to cover the bottom, about ½ inch deep. Heat the oil over medium-high heat until it reaches around 350°F (180°C). You can test if it's ready by dropping in a small breadcrumb—if it sizzles immediately, the oil is hot enough.

Fry the Tortellini: Carefully add the breaded tortellini to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy on all sides. Use a slotted spoon to transfer them to a plate lined with paper towels to drain any excess oil.

Garnish and Serve: Once all the tortellini are fried, sprinkle them with extra Parmesan cheese and chopped fresh parsley. Serve immediately with marinara sauce on the side for dipping.
