2 cups frozen edamame, shelled

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/2 cup freshly grated Parmesan cheese

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Edamame: In a medium-sized pot, bring a large pot of water to a boil. Add the frozen edamame and cook for about 5 minutes or until tender but still firm. Drain and set aside.

    Prepare the Garlic Oil: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until the garlic is fragrant but not browned.

      Combine Edamame and Seasoning: Add the drained edamame to the skillet and toss to coat in the garlic oil. Season with sea salt and black pepper, mixing well.
