1 sheet of puff pastry (thawed)

2 ripe peaches, sliced

8 oz Brie cheese, rind removed and cut into thin slices

2 tablespoons honey

1 tablespoon fresh rosemary leaves, chopped (or 1 teaspoon dried rosemary)

1 egg (beaten, for egg wash)

1 tablespoon brown sugar (optional)

A pinch of salt

Freshly cracked black pepper (to taste)

Balsamic glaze (for drizzling)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry to smooth any creases. Cut the pastry into four equal squares (approximately 4-inch x 4-inch size).

      Score the Edges: Use a sharp knife to gently score a 1/2-inch border around the edge of each square—do not cut all the way through. This will create a raised border during baking.

        Place the Tarts: Transfer the pastry squares onto the prepared baking sheet. Prick the center of each square with a fork to prevent it from puffing too much.

          Add Brie Cheese: Inside the scored border, arrange the sliced Brie cheese evenly across each tart.
