2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

3/4 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 tsp ground cinnamon

1 cup fresh peaches, peeled and chopped

1/4 cup rolled oats

For the Ice Cream Filling:

2 cups vanilla ice cream, softened

1/2 cup fresh peaches, diced

1/2 tsp cinnamon (optional)

Instructions
 

Prepare the Cookies:

    - Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

      - In a bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.

        - In a separate large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.

          - Beat in the eggs one at a time, followed by the vanilla extract.

            - Gradually mix in the dry ingredients until just combined. Fold in the chopped peaches and oats gently.

              Bake the Cookies:

                - Using a cookie scoop or tablespoon, drop dough onto prepared baking sheets about 2 inches apart.
