Peach Muffins

Ingredients
  

2 cups all-purpose flour

1 cup granulated sugar

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg (optional)

1/2 cup unsalted butter, melted and cooled

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk (or milk with 1 tablespoon vinegar)

2 cups fresh peaches, peeled and diced (about 3 medium peaches)

1/2 cup chopped pecans or walnuts (optional)

1 tablespoon turbinado sugar for sprinkling on top (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

    Prepare Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg (if using).

      Mix Wet Ingredients: In a separate bowl, combine the melted butter, eggs, and vanilla extract. Whisk until well combined, then stir in the buttermilk.

        Combine Ingredients: Pour the wet mixture into the dry ingredients. Gently fold the mixture together with a spatula until just combined. Be careful not to overmix; a few lumps are fine.

          Add Peaches: Gently fold in the diced peaches and chopped nuts (if using) until evenly distributed.

            Fill Muffin Cups: Spoon the batter into the prepared muffin cups, filling each about 3/4 of the way full. If desired, sprinkle a bit of turbinado sugar on top of each muffin for added crunch.

              Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Cool: Once baked, remove the muffins from the oven and let them cool in the pan for about 5 minutes. Then transfer them to a wire rack to cool completely.

                  Serve and Enjoy: These muffins are best enjoyed warm, but they can also be stored in an airtight container for up to 3 days.
