4 large flour tortillas

2 ripe peaches, sliced thinly

1 cup shredded mozzarella cheese

1 cup cream cheese, softened

2 tablespoons honey

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 tablespoon butter (for cooking)

Fresh mint leaves (for garnish, optional)

Prepare the Cream Cheese Mixture: In a small mixing bowl, combine the softened cream cheese, honey, vanilla extract, and ground cinnamon. Mix until smooth and well blended.

    Assemble the Quesadillas: Lay out two flour tortillas on a clean surface. Evenly spread half of the cream cheese mixture onto each tortilla. Layer the sliced peaches over the cream cheese, followed by a generous sprinkle of shredded mozzarella cheese. Top with the remaining tortillas to form two quesadillas.

      Cook the Quesadillas: In a large skillet, melt 1 tablespoon of butter over medium heat. Carefully place one quesadilla in the skillet. Cook for about 3-4 minutes on one side until golden brown and the cheese is starting to melt, then flip and cook the other side for another 3-4 minutes. Repeat this process with the second quesadilla.

        Slice and Serve: Once cooked, remove the quesadillas from the skillet and let them cool for a minute. Cut each quesadilla into wedges.
