1 cup rolled oats

1 cup almond flour (or whole wheat flour)

1/2 cup brown sugar (packed)

1/4 cup coconut oil (melted) or unsalted butter

1/4 teaspoon salt

1/2 teaspoon vanilla extract

2 cups fresh peaches, diced (about 2 medium peaches)

1 cup fresh raspberries

1 tablespoon cornstarch

2 tablespoons honey or maple syrup (optional, for added sweetness)

1/2 teaspoon ground cinnamon

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line an 8x8 inch square baking dish with parchment paper for easy removal.

    Make the Oat Crust: In a large mixing bowl, combine the rolled oats, almond flour, brown sugar, coconut oil, salt, vanilla extract, and ground cinnamon. Mix until the ingredients are well incorporated and crumbly.

      Press the Crust: Reserve about 1/2 cup of the oat mixture to create the topping. Press the remaining mixture evenly into the bottom of the prepared baking dish to form the crust. Bake in the preheated oven for 10 minutes.

        Prepare the Fruit Filling: While the crust is baking, in a medium bowl, combine the diced peaches, raspberries, cornstarch, and optional honey or maple syrup. Gently toss until the fruit is coated evenly with the cornstarch.

          Assemble the Squares: After the crust has baked for 10 minutes, remove it from the oven. Spread the peach and raspberry mixture over the crust in an even layer. Sprinkle the reserved oat mixture on top of the fruit, creating a crumbly topping.

            Bake the Squares: Return the assembled dish to the oven and bake for an additional 25-30 minutes, or until the topping is golden brown and the fruit is bubbling.
