Peach Salsa Grilled Chicken

For the Chicken:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

Juice of 1 lime

For the Peach Salsa:

2 ripe peaches, diced

1 jalapeño, seeded and finely chopped

½ red onion, finely chopped

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Instructions
 

Marinate the Chicken:

    - In a mixing bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Squeeze in the juice of one lime and mix well.

      - Add the chicken breasts to the bowl and coat them evenly with the marinade. Cover and refrigerate for at least 30 minutes or up to 2 hours for more flavor.

        Prepare the Peach Salsa:

          - In a separate bowl, mix diced peaches, jalapeño, red onion, and chopped cilantro.

            - Squeeze the juice of one lime over the salsa and season with salt and pepper to taste. Mix gently to combine. Set aside.

              Grill the Chicken:

                - Preheat the grill to medium-high heat. Lightly oil the grill grates to prevent sticking.

                  - Remove the chicken from the marinade, letting excess marinade drip off. Place the chicken on the grill.

                    - Grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.

                      - Remove from the grill and let rest for 5 minutes before slicing.

                        Serve:
