Ingredients

1 cup rolled oats

1 ripe banana, mashed

1/2 cup natural peanut butter

1/4 cup honey or maple syrup

1/2 cup protein powder (vanilla or chocolate)

1/4 cup dark chocolate chips (optional)

1/4 teaspoon salt

1 teaspoon vanilla extract

1/4 cup mixed nuts or seeds (optional, for added crunch)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper for easy removal.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed banana, peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well-blended.

Add Dry Ingredients: Add the rolled oats, protein powder, salt, and mixed nuts or seeds (if using) to the wet mixture. Stir until all the ingredients are combined evenly. If you’re using chocolate chips, fold them in now.

Prepare the Pan: Pour the mixture into the prepared baking pan. Use a spatula or your hands to press the mixture down firmly and evenly into the pan.

Bake: Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and the center looks set.

Cool and Cut: Once baked, remove the pan from the oven and allow it to cool completely in the pan. Once cool, lift the bars out using the parchment paper and cut them into squares or bars, depending on your preference.

Store: Store the protein bars in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
