1 cup all-purpose flour

2 tablespoons sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup milk (dairy or non-dairy)

1/2 cup creamy peanut butter

1 large egg

1 teaspoon vanilla extract

1/2 cup chocolate chips (semi-sweet or dark)

2 tablespoons butter or oil (for cooking)

Maple syrup and additional peanut butter for serving (optional)

Instructions
 

Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt until well blended.

    Mix Wet Ingredients: In a separate bowl, mix the milk, peanut butter, egg, and vanilla extract. Whisk until the peanut butter is fully incorporated and the mixture is smooth.

      Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to over-mix; a few lumps are okay. Fold in the chocolate chips.

        Heat Griddle: Preheat a non-stick skillet or griddle over medium heat. Add 1 tablespoon of butter or oil and let it melt, coating the bottom of the skillet.

          Cook Pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through.

            Repeat Cooking: Repeat the process with the remaining batter, adding more butter or oil to the skillet as needed.
