Ingredients

1 cup creamy peanut butter

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups all-purpose flour

1 cup semi-sweet chocolate chips

12 mini peanut butter cups, halved

Sea salt (for sprinkling)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Creaming the Mix: In a large mixing bowl, combine the creamy peanut butter and softened butter. Beat them together using a hand mixer or stand mixer on medium speed until smooth and creamy.

Add Sugars: Gradually add in the brown sugar and granulated sugar to the butter mixture. Mix until well combined and fluffy.

Incorporate Egg and Vanilla: Add the egg and vanilla extract to the mixture, beating until fully incorporated.

Dry Ingredients: In a separate bowl, whisk together the baking soda, salt, and all-purpose flour. Slowly add the dry mixture to the wet ingredients, mixing until just combined.

Fold in Chocolate Chips: Gently fold in the semi-sweet chocolate chips until evenly distributed throughout the cookie dough.

Prepare Cookie Balls: Using a cookie scoop or your hands, form the cookie dough into balls about 1.5 inches in diameter. Place them on the prepared baking sheet, leaving about 2 inches of space between each cookie for spreading.

Add Peanut Butter Cups: Press half of a mini peanut butter cup into the center of each cookie ball; this will ensure a delicious gooey surprise in every bite.

Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges are golden brown.

Final Touch: Once removed from the oven, sprinkle a tiny pinch of sea salt on top of each cookie for that perfect sweet and salty balance.

Cool and Serve: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
