Peanut Butter Oatmeal Cookies

1 cup creamy or crunchy peanut butter

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup all-purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chocolate chips (optional)

1/2 cup chopped nuts (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine the peanut butter, brown sugar, granulated sugar, egg, and vanilla extract. Beat with an electric mixer or wooden spoon until smooth and creamy.

      Combine Dry Ingredients: In a separate bowl, whisk together the rolled oats, all-purpose flour, baking soda, and salt until they're well blended.

        Combine Mixtures: Gradually add the dry mixture to the peanut butter mixture. Stir until just combined. If desired, fold in the chocolate chips and/or chopped nuts.

          Shape Cookies: Using a tablespoon or cookie scoop, portion out the dough onto the prepared baking sheet, spacing them about 2 inches apart as they will spread slightly.

            Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The centers may look slightly underdone, but they will firm up as they cool.

              Cool Down: Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
