1 cup granulated sugar

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp nutmeg (optional)

½ cup unsalted butter, melted

2 large eggs

1 tsp vanilla extract

½ cup buttermilk (or milk with 1 tsp vinegar added)

1 ½ cups diced apples (peeled and cored, ideally Granny Smith for tartness)

½ cup chopped walnuts or pecans (optional)

1 tbsp coarse sugar for topping (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

      Prepare Wet Ingredients: In a separate bowl, combine the melted butter, eggs, vanilla extract, and buttermilk. Mix until smooth.

        Combine Ingredients: Pour the wet ingredients into the dry ingredients. Stir just until combined; do not overmix. The batter will be slightly lumpy.

          Fold in Apples and Nuts: Gently fold in the diced apples and chopped nuts (if using) until evenly distributed throughout the batter.
