Ingredients
  

For the Meatballs:

1 lb ground turkey

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup fresh basil, finely chopped

2 cloves garlic, minced

1 large egg

1 tsp salt

1/2 tsp black pepper

1 tsp Italian seasoning

For the Skillet:

1 tablespoon olive oil

1 cup cherry tomatoes, halved

1 cup spinach

1/2 cup pesto (store-bought or homemade)

1/4 cup heavy cream (optional, for a creamier sauce)

Salt and pepper to taste

Fresh basil or grated Parmesan for garnish

Instructions
 

Make the Meatballs:

    In a large bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, chopped basil, minced garlic, egg, salt, black pepper, and Italian seasoning. Mix well until all ingredients are thoroughly combined.

      Shape the Meatballs:

        With your hands, form the mixture into small meatballs, about 1 inch in diameter. You should have around 20-24 meatballs.

          Cook the Meatballs:

            Heat the olive oil in a large skillet over medium heat. Once hot, add the turkey meatballs in batches, cooking for about 5-6 minutes until browned on all sides and cooked through. Once done, remove the meatballs from the skillet and set aside.

              Prepare the Skillet:

                In the same skillet, add the cherry tomatoes and cook for about 3-4 minutes until they begin to soften. Then, add the spinach and cook for an additional 2 minutes until wilted.

                  Combine Ingredients:

                    Return the cooked meatballs to the skillet and stir in the pesto. If you like a creamier dish, add the heavy cream and mix well to combine all flavors, cooking for another 2-3 minutes to heat through. Taste and season with salt and pepper as needed.

                      Serve:
