1 cup couscous

1 cup vegetable broth (or water)

1/4 cup basil pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

1 medium zucchini, diced

1 bell pepper (any color), diced

1 cup baby spinach

1/4 cup feta cheese, crumbled (optional)

1/4 tsp salt

1/4 tsp black pepper

1 tbsp olive oil

Juice of 1 lemon

Fresh basil leaves for garnish

Cook the Couscous: In a medium saucepan, bring the vegetable broth (or water) to a boil. Once boiling, stir in the couscous, cover, and remove from heat. Let it sit for about 5 minutes or until all the liquid is absorbed. Fluff with a fork.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced zucchini and bell pepper. Sauté for about 3-4 minutes until they start to soften.

      Add Spinach and Tomatoes: Add the halved cherry tomatoes and baby spinach to the skillet. Season with salt and pepper. Cook for another 2-3 minutes until the spinach wilts and the tomatoes are warm.

        Combine: In a large bowl, mix the fluffed couscous with the sautéed vegetables. Pour in the basil pesto and lemon juice. Toss everything together until the couscous is well coated.

          Serve: Divide the couscous bowl into serving dishes. If desired, sprinkle crumbled feta cheese on top and garnish with fresh basil leaves.
