Ingredients

1 lb beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, diced

1 green bell pepper, diced

1 red bell pepper, diced

2 cloves garlic, minced

4 cups beef broth

1 cup heavy cream

2 tablespoons Worcestershire sauce

1 teaspoon dried oregano

Salt and pepper to taste

8 oz cream cheese, softened

1 ½ cups provolone cheese, shredded

¼ cup chopped fresh parsley (for garnish)

Instructions

Sauté the Beef: In a large pot, heat olive oil over medium-high heat. Add the thinly sliced beef sirloin, season with salt and pepper, and cook for about 3-4 minutes until browned. Remove from the pot and set aside.

Cook the Vegetables: In the same pot, add the diced onion, green bell pepper, and red bell pepper. Sauté for about 5-7 minutes until the vegetables are soft. Add the minced garlic and cook for an additional minute until fragrant.

Combine Broth and Seasonings: Pour in the beef broth and bring to a simmer. Stir in the Worcestershire sauce, dried oregano, and the browned beef. Let it simmer for about 10-15 minutes to allow all flavors to meld.

Incorporate the Cream: Reduce heat to low and stir in the heavy cream and softened cream cheese. Mix well until the cream cheese is fully melted and blended with the soup.

Add Cheese: Gradually stir in the provolone cheese until it is completely melted and the soup is creamy. Adjust seasoning with more salt and pepper if needed.

Serve: Ladle the soup into bowls and garnish with fresh parsley. For an extra cheesesteak feel, top with additional provolone cheese or even crispy fried onions if desired.

Enjoy: Serve hot with crusty bread for dipping!
