Ingredients

1 can (14 oz) of sweetened condensed milk

1 cup crushed pineapple (drained)

1/2 cup unsalted butter, softened

4 large eggs

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon vanilla extract

1/2 cup shredded coconut (optional)

1/4 cup chopped walnuts or pecans (optional, for garnish)

Whipped cream (for serving, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper for easy removal.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes, using an electric mixer on medium speed.

Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract until fully combined.

Incorporate Condensed Milk and Pineapple: Gradually fold in the sweetened condensed milk and crushed pineapple into the butter mixture. If using shredded coconut, add it at this stage.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.

Mix Dry with Wet Ingredients: Gradually add the dry ingredients to the wet mixture, folding until just combined. Be careful not to overmix; a few lumps are okay.

Bake the Cake: Pour the batter into the prepared baking pan, smoothing the top with a spatula. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Cool: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.

Garnish and Serve: If desired, sprinkle with chopped walnuts or pecans for added texture and serve with whipped cream on the side.

Enjoy! Slice the cake and enjoy its delicious, sweet, and tropical flavors!
