Ingredients

1 cup rolled oats

1/2 cup protein powder (vanilla or unflavored)

1 large banana, mashed

2 large eggs

1/2 cup milk (dairy or non-dairy)

1 tsp baking powder

1 tsp vanilla extract

1/4 tsp salt

1 cup mixed berries (fresh or frozen, such as blueberries, strawberries, and raspberries)

Optional toppings: Greek yogurt, maple syrup, extra berries, or nut butter

Instructions

Prep the Oats: In a blender, pulse the rolled oats until they resemble flour. This will give your waffles a nice texture.

Mix Dry Ingredients: In a large mixing bowl, combine the oat flour, protein powder, baking powder, and salt. Mix until evenly distributed.

Combine Wet Ingredients: In another bowl, whisk together the mashed banana, eggs, milk, and vanilla extract until smooth.

Combine Mixtures: Pour the wet mixture into the bowl of dry ingredients. Stir until just combined. If the batter seems too thick, you can add a splash more milk until you reach a desirable consistency.

Fold in Berries: Gently fold the mixed berries into the batter, ensuring an even distribution but being careful not to overmix.

Heat the Waffle Maker: Preheat your waffle maker according to the manufacturer's instructions.

Cook the Waffles: Lightly grease the waffle maker with cooking spray or a small amount of oil. Pour an appropriate amount of batter onto the heated waffle maker (usually about 1/2 to 3/4 cup, depending on the size of your waffle maker). Close the lid and cook until golden brown and crispy, about 5-7 minutes.

Serve and Enjoy: Carefully remove the waffle and repeat with the remaining batter. Serve warm with your choice of toppings, such as Greek yogurt, a drizzle of maple syrup, and extra berries or nut butter.
