2 cups pumpkin puree (canned or freshly cooked)

1 medium onion, chopped

2 cloves garlic, minced

1 medium carrot, diced

1 medium potato, diced

4 cups vegetable broth

1 cup coconut milk (or heavy cream for a richer taste)

1 teaspoon ground ginger

1 teaspoon ground cumin

1/2 teaspoon nutmeg

Salt and pepper to taste

2 tablespoons olive oil

1/4 cup pumpkin seeds (pepitas), toasted

Fresh parsley or cilantro for garnish

Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic. Sauté until translucent and fragrant, about 5 minutes.
