4 cups of cubed day-old brioche bread

1 cup canned pumpkin puree

4 large eggs

1 cup milk (or milk alternative)

1/4 cup brown sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

Pinch of salt

Cooking spray or melted butter (for greasing)

Optional toppings: maple syrup, powdered sugar, whipped cream, chopped pecans or walnuts

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or melted butter, making sure to coat each cup well.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, pumpkin puree, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and a pinch of salt until smooth and creamy.

      Combine Bread and Egg Mixture: Add the cubed brioche bread to the bowl with the egg mixture. Stir gently until the bread is well-coated and the mixture is evenly distributed. Allow the bread to soak for about 5-10 minutes, stirring occasionally to ensure all pieces are absorbing the liquid.

        Fill the Muffin Tin: Evenly divide the soaked bread mixture among the greased muffin cups. Lightly press down the mixture to compact it, ensuring the cups are well-filled but not overflowing.
