1 cup rolled oats

1/2 cup pumpkin puree (not pumpkin pie filling)

1/4 cup honey or maple syrup

1/4 cup peanut butter or almond butter

1/2 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts, pecans, or almonds)

1/2 cup dried cranberries or raisins

Optional: 1/4 cup chocolate chips

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

    Mix the Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, honey (or maple syrup), peanut butter, and vanilla extract. Stir until smooth and well combined.

      Combine Dry Ingredients: In another bowl, mix the rolled oats, pumpkin pie spice, and salt. Toss in the chopped nuts and dried fruits (and chocolate chips if using).

        Blend Wet and Dry: Gradually add the dry mixture to the wet ingredients, stirring until everything is evenly coated.

          Form Clusters: Using your hands or a spoon, scoop out small amounts of the mixture and form clusters about the size of a golf ball. Space them out on the prepared baking sheet, flattening them slightly.

            Bake: Bake in the preheated oven for 15-20 minutes, or until the clusters are golden and firm to the touch.

              Cool and Enjoy: Once baked, remove from the oven and let them cool on the baking sheet for about 10 minutes. They will firm up a bit more as they cool. Transfer to a wire rack to cool completely.
