1/2 cup pumpkin puree

1/3 cup honey or maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/2 cup almond flour (or any flour of choice)

1 teaspoon baking powder

1 teaspoon pumpkin pie spice (or a mix of cinnamon, nutmeg, and ginger)

Pinch of salt

1/4 cup raisins or chocolate chips (optional)

1/4 cup chopped nuts (walnuts or pecans, optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, honey (or maple syrup), melted coconut oil, and vanilla extract. Stir until well combined and smooth.

      Combine Dry Ingredients: In another bowl, mix the rolled oats, almond flour, baking powder, pumpkin pie spice, and salt. Make sure there are no clumps.

        Combine Mixtures: Gradually add the dry mixture into the wet mixture, stirring until fully incorporated. If desired, fold in the raisins or chocolate chips and nuts for added texture and flavor.

          Shape the Cookies: Using a tablespoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 2 inches apart. Flatten them slightly, as they won’t spread much during baking.
