Ingredients

1 cup canned pumpkin puree

1/2 cup vegetable oil (or melted coconut oil)

1/2 cup brown sugar, packed

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon cloves

1/2 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips or raisins (optional)

Instructions

Preheat the oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.

Mix wet ingredients: In a large mixing bowl, combine the pumpkin puree, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract. Whisk until smooth and creamy.

Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt until uniformly mixed.

Combine mixtures: Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Be careful not to overmix; a few lumps are perfectly fine.

Fold in add-ins: If desired, fold in the chopped walnuts or pecans and chocolate chips or raisins for added flavor and texture.

Fill muffin tin: Divide the batter evenly among the muffin cups, filling each about two-thirds full.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool: Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Serve: Enjoy your warm, delicious pumpkin spice breakfast muffins with a drizzle of honey or a spread of butter if desired.
