1 cup vegetable oil

4 large eggs

1 cup pure pumpkin puree (not pumpkin pie filling)

1 teaspoon vanilla extract

For the Cream Cheese Frosting:

8 ounces cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

2 tablespoons milk (adjust for desired consistency)

A pinch of salt

For Garnish:

Crushed pecans or walnuts (optional)

A sprinkle of ground cinnamon

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients: In a medium bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Set aside.

      Combine Sugars and Oils: In a large mixing bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until well combined.

        Add Eggs and Flavorings: Beat in the eggs one at a time, ensuring each is fully incorporated. Add the pumpkin puree and vanilla extract, mixing until the mixture is smooth.

          Incorporate Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.

            Pour Batter: Divide the batter evenly between the two prepared cake pans. Smooth the tops with a spatula.

              Bake: Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.

                  Assemble the Cake: Once the cakes are completely cool, place one layer on a cake stand or serving plate. Spread a generous layer of cream cheese frosting on top. Place the second layer on top and frost the top and the sides of the cake.
