Pumpkin Spice Muffins

1 ½ cups all-purpose flour

1 cup canned pumpkin puree

½ cup granulated sugar

½ cup brown sugar, packed

½ cup vegetable oil or melted coconut oil

2 large eggs

1 tsp vanilla extract

1 tsp baking soda

½ tsp baking powder

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp ground ginger

¼ tsp ground cloves

½ tsp salt

½ cup chopped walnuts or pecans (optional)

½ cup chocolate chips (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a standard muffin tin with paper liners or lightly grease it.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until the mixture is smooth and well blended.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, ground spices (cinnamon, nutmeg, ginger, cloves), and salt until evenly incorporated.

        Combine Mixtures: Gradually fold the dry ingredients into the wet mixture. Stir gently until just combined; be careful not to overmix. The batter should be thick and slightly lumpy.

          Add Optional Ingredients: If you're using nuts or chocolate chips, gently fold them into the batter at this stage.

            Fill Muffin Tins: Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.

              Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Cool: Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
