1 lb (450g) beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) mushrooms, sliced

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

1 tablespoon cornstarch (optional, for thickening)

Salt and pepper, to taste

8 oz (225g) egg noodles

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Beef: While the noodles are cooking, heat the olive oil in a large skillet over medium-high heat. Add the sliced beef and season with salt and pepper. Sauté until browned (about 2-3 minutes). Remove the beef from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until they become translucent. Add the sliced mushrooms and cook for an additional 5 minutes until they are golden brown.

        Make the Sauce: Reduce the heat to medium, and return the beef to the skillet. Stir in the beef broth, Worcestershire sauce, and Dijon mustard. Simmer for 5 minutes. If you prefer a thicker sauce, mix the cornstarch with a bit of cold water to create a slurry and stir it into the sauce at this point.

          Combine with Sour Cream: Remove the skillet from the heat and gently fold in the sour cream until well combined. Adjust seasoning with salt and pepper as needed.

            Serve: Toss the cooked noodles into the skillet with the beef and sauce, ensuring everything is well coated.

              Garnish and Enjoy: Serve hot, garnished with freshly chopped parsley for a pop of color and flavor.
