Ingredients
  

2 cups cooked rice (white or brown)

2 cups shredded rotisserie chicken

1 cup BBQ sauce (your favorite brand)

1 cup frozen mixed vegetables (peas, carrots, corn)

1 cup shredded cheddar cheese

1/2 cup diced onions

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onions and sauté for about 3-4 minutes until they are translucent.

      Combine Chicken and Rice: In a large mixing bowl, combine the cooked rice, shredded chicken, sautéed onions, frozen mixed vegetables, BBQ sauce, garlic powder, smoked paprika, salt, and pepper. Mix until everything is evenly coated.

        Layer the Casserole: Transfer half of the chicken and rice mixture to a greased 9x13 inch casserole dish. Spread it out evenly. Sprinkle half of the shredded cheddar cheese on top.

          Add Another Layer: Pour the remaining chicken and rice mixture over the cheese layer, ensuring it is evenly distributed. Top with the remaining cheese.

            Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
