2 cups cooked chicken, shredded

1/2 cup BBQ sauce (your favorite brand or homemade)

1 large sweet potato, peeled and diced

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper, to taste

4 large whole wheat tortillas

1 cup baby spinach

1/2 cup shredded cheddar cheese (optional)

1/4 cup chopped fresh cilantro (for garnish)

Instructions
 

Prepare the Sweet Potatoes:

    - Preheat your oven to 425°F (220°C).

      - In a bowl, toss the diced sweet potatoes with olive oil, smoked paprika, salt, and pepper. Spread them evenly on a baking sheet.

        - Roast in the preheated oven for about 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.

          Mix the Chicken and BBQ Sauce:

            - While the sweet potatoes are roasting, combine the shredded chicken with the BBQ sauce in a medium saucepan over low heat. Stir until the chicken is evenly coated and heated through, about 5-7 minutes.

              Assemble the Wraps:

                - Lay the large tortillas flat on a clean surface.

                  - Start by placing a layer of baby spinach on each tortilla.

                    - Next, add a generous scoop of the BBQ chicken mixture, followed by a handful of roasted sweet potatoes.

                      - If desired, sprinkle some shredded cheddar cheese over the top for an extra layer of flavor.

                        Wrap it Up:

                          - Fold in the sides of the tortilla and then roll from the bottom up to create a wrap. Make sure to tuck in the filling as you roll to keep it contained.

                            Serve:

                              - Cut each wrap in half and garnish with chopped fresh cilantro. Serve warm with additional BBQ sauce for dipping.
