1 lb (450g) ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 jalapeño, diced (adjust for spice preference)

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

2 cups beef broth

2 tbsp olive oil

Optional toppings: sour cream, shredded cheese, chopped green onions, cilantro

Instructions
 

Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, garlic, red bell pepper, and jalapeño. Sauté for about 5 minutes until the onions become translucent and the peppers soften.

    Brown the Beef: Push the sautéed vegetables to one side of the pot and add the ground beef. Cook for about 6-8 minutes, breaking it up with a spoon, until browned and no longer pink. Drain excess fat if necessary.

      Spices and Beans: Stir in chili powder, cumin, smoked paprika, salt, and black pepper, mixing thoroughly. Add the drained kidney beans and black beans, diced tomatoes with their juice, and beef broth. Stir until everything is combined.

        Simmer the Chili: Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 20-25 minutes. Stir occasionally to avoid sticking.

          Taste and Adjust: After simmering, taste the chili and adjust seasoning as needed. If you like it spicier, feel free to add more chili powder or some hot sauce.
