Quick Beef and Bean Chili in 30 Minutes

Ingredients
  

1 lb ground beef

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 medium onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons olive oil

1 cup beef broth

Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro

Instructions
 

Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes until it starts to soften. Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

      Brown the Beef

        Increase the heat to medium-high and add the ground beef to the pot. Cook, breaking it up with a spatula, until it’s browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.

          Add Spices

            Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Cook for another minute, allowing the spices to bloom and coat the beef nicely.

              Combine Ingredients

                Add the black beans, kidney beans, diced tomatoes with their juice, and beef broth to the pot. Stir well to combine all ingredients evenly.

                  Simmer the Chili

                    Bring the mixture to a boil, then reduce the heat to low. Let it simmer uncovered for about 10-12 minutes, stirring occasionally, until the chili is heated through and slightly thickened.

                      Taste & Adjust

                        Taste the chili for seasoning and adjust as needed. If you like it spicier, feel free to add a pinch of cayenne pepper or a dash of hot sauce.

                          Serve

                            Ladle the chili into bowls and top with your choice of shredded cheese, sour cream, chopped green onions, or cilantro for an extra burst of flavor.
