Quick Beef and Broccoli Stir-Fry Skillet

1 pound (450g) beef flank steak, thinly sliced against the grain

2 cups broccoli florets

1 bell pepper (red or green), sliced

3 cloves garlic, minced

1 inch ginger, grated

1/3 cup soy sauce (low sodium if preferred)

2 tablespoons oyster sauce

1 tablespoon sesame oil

2 tablespoons vegetable oil (for cooking)

1 tablespoon cornstarch

1 tablespoon water

Salt and pepper to taste

Cooked rice or noodles for serving (optional)

Sesame seeds for garnish (optional)

Instructions
 

Marinate the Beef: In a bowl, combine the thinly sliced beef, soy sauce, oyster sauce, and sesame oil. Let it marinate for 15 minutes to enhance flavor.

    Prep the Veggies: While the beef is marinating, chop the broccoli into florets and slice the bell pepper. Set aside.

      Make a Slurry: In a small bowl, mix the cornstarch and water to create a slurry. This will help thicken the sauce later.

        Heat the Skillet: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.

          Stir-Fry the Beef: Add the marinated beef to the skillet in a single layer. Sear for about 2-3 minutes without stirring to get a nice browning. Then stir-fry for another 2 minutes until it’s nearly cooked through. Remove the beef from the skillet and set aside.

            Cook the Vegetables: In the same skillet, add a little more oil if necessary. Stir in the minced garlic and grated ginger, sautéing for 30 seconds until fragrant. Add the broccoli florets and bell pepper, stirring frequently for about 4-5 minutes until bright and tender-crisp.

              Combine and Thicken: Return the beef to the skillet, and pour in the remaining marinade. Stir to coat everything. Add the cornstarch slurry to the stir-fry and mix well, allowing it to cook for an additional 1-2 minutes until the sauce thickens. Season with salt and pepper to taste.
