2 cups cooked rice (white or brown)

1 cup mixed vegetables (carrots, peas, bell peppers, corn)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup milk

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

1/2 cup grated Parmesan cheese (for topping)

Fresh parsley or chives (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Vegetables: If using fresh vegetables, chop them into small, even pieces. If using frozen mixed vegetables, just ensure they’re thawed and drained.

      Mix Ingredients: In a large mixing bowl, combine the cooked rice, mixed vegetables, shredded cheddar cheese, and mozzarella cheese.

        Create the Egg Mixture: In another bowl, whisk together the milk, eggs, garlic powder, onion powder, dried oregano, salt, and pepper until well combined.

          Combine: Pour the egg mixture over the rice and vegetable mixture, and stir until everything is evenly coated and combined.

            Transfer to Baking Dish: Grease a 9x13 inch (23x33 cm) baking dish. Pour the mixture into the dish, spreading it evenly.

              Add Parmesan Topping: Sprinkle the grated Parmesan cheese on top of the rice mixture for a crispy, cheesy topping.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the bake is set.

                  Cool & Garnish: Once out of the oven, let it cool for about 5 minutes. Garnish with chopped fresh parsley or chives if desired.
