Ingredients

2 boneless, skinless chicken breasts (about 1 pound)

8 ounces fettuccine or penne pasta

1 cup broccoli florets

1 cup frozen peas

3 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

A pinch of red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. In the last 3 minutes of cooking, stir in the broccoli florets and frozen peas. Drain and set aside.

Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt, pepper, and a pinch of red pepper flakes for some heat (if desired).

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes per side, or until they are cooked through and golden brown. Remove from the skillet and let rest for a few minutes, then slice into strips.

Make the Alfredo Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.

Combine Everything: Add the drained pasta, broccoli, and peas to the sauce. Add the sliced chicken on top and gently toss everything together until well coated with the creamy sauce.

Serve: Plate the Chicken Alfredo with Broccoli & Peas, garnish with freshly chopped parsley, and enjoy!
