Quick Lemon Garlic Shrimp and Quinoa Bowls

2 cups vegetable broth (or water)

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

4 garlic cloves, minced

Zest and juice of 1 large lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

1 cup cherry tomatoes, halved

1 cup baby spinach or arugula

Fresh parsley, chopped (for garnish)

Cook the Quinoa: In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until all the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
