Ingredients

1 lb (450g) boneless, skinless chicken breasts, thinly sliced

2 tablespoons vegetable oil

2 cups mixed vegetables (bell peppers, broccoli, and snap peas)

3 cloves garlic, minced

1 teaspoon ginger, grated

1/4 cup soy sauce (low-sodium preferred)

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

2 green onions, sliced (for garnish)

Sesame seeds (optional, for garnish)

Cooked rice or noodles (for serving)

Instructions

Marinate Chicken: In a medium bowl, combine the sliced chicken, soy sauce, honey (or maple syrup), rice vinegar, garlic, and ginger. Let it marinate for about 15 minutes while you prepare the vegetables.

Prepare the Veggies: Wash and slice the vegetables into bite-sized pieces. This should include your bell peppers, broccoli, and snap peas for a colorful mix.

Sauté Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken (reserve the marinade) and cook for about 5-7 minutes, or until the chicken is browned and cooked through. Stir frequently to ensure even cooking.

Add Veggies: Once the chicken is cooked, add the mixed vegetables to the skillet. Stir-fry for an additional 3-4 minutes until the veggies are tender-crisp and vibrant in color.

Thicken Sauce: Pour in the reserved marinade along with the cornstarch slurry. Stir continuously for about 1-2 minutes until the sauce thickens to your desired consistency.

Serve: Remove from heat and serve the stir-fry over cooked rice or noodles. Garnish with sliced green onions and a sprinkle of sesame seeds if desired.

Enjoy: Dig into this quick and flavorful Teriyaki Bliss Chicken Stir-Fry!
