Quick Teriyaki Salmon with Rice and Broccoli

4 salmon fillets (6 oz each)

½ cup soy sauce (low sodium preferred)

¼ cup honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 cups jasmine rice

4 cups broccoli florets

2 tablespoons sesame seeds (for garnish)

2 green onions, sliced (for garnish)

Salt and pepper to taste

Instructions
 

Prep the Marinade: In a medium bowl, whisk together soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and grated ginger until well combined.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour half of the marinade over them. Let them marinate for at least 15 minutes (or up to 1 hour in the refrigerator for more flavor).

      Cook the Rice: While the salmon marinates, rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice with 4 cups of water and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the water is absorbed.

        Steam the Broccoli: In the last 5 minutes of the rice cooking time, bring a pot of water to a boil and place a steam basket over the pot. Add the broccoli florets, cover, and steam for 5 minutes, or until bright green and tender but still crisp. Remove from heat and set aside.

          Cook the Salmon: Preheat your grill or stovetop skillet over medium-high heat. Remove the salmon from the marinade (discard marinade) and season with salt and pepper. Grill the salmon for about 4-5 minutes on each side, until the center is opaque and flakes easily with a fork.

            Prepare the Glaze: In a small saucepan, bring the remaining marinade to a boil over medium heat. Let it simmer for 3-4 minutes until it thickens slightly. Brush this glaze over the cooked salmon fillets.

              Serve: Fluff the jasmine rice with a fork and divide it among plates. Serve the teriyaki salmon on top of the rice, alongside the steamed broccoli. Drizzle with extra glaze and sprinkle sesame seeds and sliced green onions on top for garnish.
