Quick Turkey and Spinach Stuffed Peppers

4 large bell peppers (any color)

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa (or rice)

1 cup diced tomatoes (canned or fresh)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

1 cup shredded mozzarella cheese

2 tablespoons olive oil

Fresh parsley or basil for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them in a baking dish, cut side up.

      In a large skillet, heat the remaining olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.

        Stir in minced garlic and ground turkey. Cook until the turkey is browned and cooked through, about 5-7 minutes.

          Add chopped spinach, cooked quinoa (or rice), diced tomatoes, and seasonings (Italian seasoning, paprika, salt, and pepper) into the skillet. Stir well and cook for an additional 2-3 minutes until the spinach has wilted.

            Remove the skillet from heat and stir half of the shredded mozzarella cheese into the turkey and spinach mixture.

              Stuff each prepared bell pepper with the turkey filling, pressing down gently to pack it in.

                Top each stuffed pepper with the remaining mozzarella cheese.

                  Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                    Remove from the oven and let cool for a few minutes. Garnish with fresh parsley or basil before serving.
