Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

1/2 cup ranch dressing (use a homemade or store-bought version)

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 tbsp fresh parsley, chopped (or 1 tsp dried parsley)

1 tsp onion powder

1 tsp paprika

1/2 tsp black pepper

1/2 tsp salt

1 tbsp olive oil

Skewers (wooden or metal, soaked in water if wooden)

Instructions

Marinate the Chicken: In a large bowl, combine ranch dressing, Parmesan cheese, minced garlic, parsley, onion powder, paprika, black pepper, and salt. Mix well to create a flavorful marinade.

Add Chicken: Add the cubed chicken to the marinade, ensuring each piece is well-coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

Preheat the Grill: If using a charcoal or gas grill, preheat it to medium-high heat. For oven baking, preheat the oven to 400°F (200°C).

Prepare Skewers: Thread the marinated chicken onto the skewers, leaving a little space between each piece to ensure even cooking.

          Grill or Bake:

            - Grilling: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.

              - Baking: Arrange the skewers on a baking sheet lined with parchment paper and bake for 15-20 minutes, turning halfway through, until the chicken is cooked to an internal temperature of 165°F (75°C).

Serve: Remove the skewers from the grill or oven and let them rest for a few minutes. Serve hot, garnished with extra parsley and a sprinkle of Parmesan if desired.
